Does anyone know if it is possible to use steam to start Crossfire?
And if so how, because the .exe starts a launcher which then starts the game, so its not direct.
Any help would be apprieciated

It is possible. In the Library section click on the add game tab then click add non steam game. Locate the game in your directory (C drive or where ever it is on your comp) & check the box next to it then click add selected programs.
Bypassing the launcher is not a good idea, It's there for a reason. It's especially not a good idea if you plan on going online, It's there for a really good reason.
Just have Steam launch the launcher in Freelancer.exe in the EXE directory of your Crossfire directory. Works fine.
Whats the benefit to start it via Steam?
As Seqan said, you are not bypassing the CF launcher it just runs it through steam. Huor, when launching CF through steam you can message friends on steam while in game and you also have access to the overlay which allows you to look for something (such as where a certain ship or weapon is located) without having to quit playing.
