Hello 0drew0,I never tried switching between Normal and Open SP while playing through CF campaign (so can't answer your main question), but when you use Open SP and the game starts in Sigma-17 with a Starflier and 0 credits, just close your game, double-click "OpenSPFix.cmd" in your Freelancer folder and follow the instructions there.
