In my experience, one torpedo fore & aft works ok, so you can do an attack as you turn away from the target for another pass, and to let your front shields heal a bit. The only torp that fires irrespective of orientation is the Bio-Neural torpedo, which I have seen launch forward from the rear mount, and has its own cooldown.
