I haven't played freelance or the crossfire mods in long time. I've been searching but i can't find if crossfire supports 1080p and Triple Monitor resolution. I want to know those crossfire supports these resolution?
Resolution - FullHD (1080p)/Surround Modes (5780x1080)

hard to say, such resolution was not mentioned here before and Freelancer game is quite old. Crossfire graphic look is modern, but still it is running on "old" engine = it have limits. We have here one regularly playing (in multiplayer) member which use 2,560×1,080 .. it however bring some graphical issues in some moments like can be dock on planets (Recently at Planet Berlin).

It should be one wide-screen monitor and CF automatically use it. Details you need to ask Moorhuhn.

Can't add to the asked problem, but seen on screenshots that the CF-fonts didn't install correctly for you.
Go to x:\*you path to freelancer*\DATA\FONTS\Files and double-klick on Crossfire_2.ttf to install them by hand... -

(To the screren for triple monitors for to the game directory and go into the DATA folder. Scroll down and you will see something call cameras.ini. Open it in notepad as admin. There are a three pre assigned FOV already there choose the best one that suits you.)
It's a good idea not to edit those files. Widescreen are controlled by a plugin (jflp.dll) and not having values at 0 (zero) disables this plugin (to my knowledge). Editing the Mod also can get you a ban in MP.
Run the cfwidescreenfix.exe in Freelancer folder instead of editing anything. Then show us some more screenies
